Ingredients:
- 2 tablespoons date powder
- 10 Deglet Noor dates, finely chopped
- 2 cups old-fashioned rolled oats
- 1/2 cup raw almonds, roughly chopped
- 1/2 cup raw cashews, roughly chopped
- 1/2 cup mixed dried fruits (golden raisins, cranberries, figs)
- 1/4 cup maple syrup or honey
- 3 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of sea salt
Instructions:
- Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper
- Mix oats, chopped nuts, date powder, cinnamon, and salt in a large bowl
- In a separate bowl, combine melted coconut oil, maple syrup, and vanilla
- Pour wet ingredients over dry ingredients, mix thoroughly until well coated
- Spread mixture evenly on prepared baking sheet, pressing down slightly to create clusters
- Bake for 20-25 minutes, stirring gently halfway through (keep clusters intact)
- Once golden brown, remove from oven and let cool completely (this is when clusters become crunchy)
- Once cooled, break into clusters and mix in chopped dates and dried fruits
