Naturally Sweet Granola Clusters

Ingredients:

  • 2 tablespoons date powder
  • 10 Deglet Noor dates, finely chopped
  • 2 cups old-fashioned rolled oats
  • 1/2 cup raw almonds, roughly chopped
  • 1/2 cup raw cashews, roughly chopped
  • 1/2 cup mixed dried fruits (golden raisins, cranberries, figs)
  • 1/4 cup maple syrup or honey
  • 3 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of sea salt

Instructions:

  1. Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper
  2. Mix oats, chopped nuts, date powder, cinnamon, and salt in a large bowl
  3. In a separate bowl, combine melted coconut oil, maple syrup, and vanilla
  4. Pour wet ingredients over dry ingredients, mix thoroughly until well coated
  5. Spread mixture evenly on prepared baking sheet, pressing down slightly to create clusters
  6. Bake for 20-25 minutes, stirring gently halfway through (keep clusters intact)
  7. Once golden brown, remove from oven and let cool completely (this is when clusters become crunchy)
  8. Once cooled, break into clusters and mix in chopped dates and dried fruits

Pro Tips:

  • Don't add dried fruits before baking as they can burn
  • For extra-clustery granola, don't stir too much while baking
  • Store in an airtight container at room temperature
  • Perfect for breakfast, snacking, or as a yogurt topping
