Ingredients:
- 20 Deglet Noor dates, pitted
- 1/2 cup almond flour
- 3 tablespoons cocoa powder
- 1 teaspoon vanilla extract
- Pinch of sea salt
For Coating (choose one or mix):
- Cocoa powder
- Crushed pistachios
- Shredded coconut
- Date powder
- Crushed almonds
Instructions:
- Place pitted dates in a food processor and pulse until finely chopped
- Add almond flour, 2 tablespoons cocoa powder (save 1 for coating), vanilla, and salt. Process until mixture forms a dough-like consistency
- Using clean hands, roll mixture into small balls (about 1 inch diameter)
- Place your chosen coating(s) in shallow dishes
- Roll each truffle in desired coating until well covered
- Chill for at least 30 minutes before serving

- If dates are dry, soak in warm water for 10 minutes, then drain well
