Festive Date Truffles

Ingredients:

  • 20 Deglet Noor dates, pitted
  • 1/2 cup almond flour
  • 3 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

For Coating (choose one or mix):

  • Cocoa powder
  • Crushed pistachios
  • Shredded coconut
  • Date powder
  • Crushed almonds

Instructions:

  1. Place pitted dates in a food processor and pulse until finely chopped
  2. Add almond flour, 2 tablespoons cocoa powder (save 1 for coating), vanilla, and salt. Process until mixture forms a dough-like consistency
  3. Using clean hands, roll mixture into small balls (about 1 inch diameter)
  4. Place your chosen coating(s) in shallow dishes
  5. Roll each truffle in desired coating until well covered
  6. Chill for at least 30 minutes before serving

Pro Tips:

  • If dates are dry, soak in warm water for 10 minutes, then drain well
  • Keep truffles refrigerated until serving
  • For special occasions, place each truffle in a mini cupcake liner
  • Perfect for gifting or entertaining
