Ingredients:
- 15 Deglet Noor dates, pitted
- 1 cup raw cashews
- 1/3 cup golden raisins
- 1 tablespoon vanilla extract
- 1/4 teaspoon cinnamon (optional)
- Pinch of sea salt
For Rolling (optional):
- Shredded coconut
- Crushed cashews
- Date powder
Instructions:
- Place cashews in a food processor and pulse until finely chopped (but not too fine - you want some texture)
- Add dates, raisins, vanilla, cinnamon, and salt. Pulse until the mixture starts to come together and forms a dough-like consistency
- Test the mixture by pressing a small amount between your fingers - it should stick together easily. If too dry, add 1-2 more dates
- Using clean hands, roll mixture into balls (about 1 tablespoon each)
- Optional: Roll balls in shredded coconut, crushed cashews, or date powder

- If dates are very dry, soak them in warm water for 10 minutes, then drain well
