Date & Cashew Energy Balls

Ingredients:

  • 15 Deglet Noor dates, pitted
  • 1 cup raw cashews
  • 1/3 cup golden raisins
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon cinnamon (optional)
  • Pinch of sea salt

For Rolling (optional):

  • Shredded coconut
  • Crushed cashews
  • Date powder

Instructions:

  1. Place cashews in a food processor and pulse until finely chopped (but not too fine - you want some texture)
  2. Add dates, raisins, vanilla, cinnamon, and salt. Pulse until the mixture starts to come together and forms a dough-like consistency
  3. Test the mixture by pressing a small amount between your fingers - it should stick together easily. If too dry, add 1-2 more dates
  4. Using clean hands, roll mixture into balls (about 1 tablespoon each)
  5. Optional: Roll balls in shredded coconut, crushed cashews, or date powder

Pro Tips:

  • If dates are very dry, soak them in warm water for 10 minutes, then drain well
  • Store in an airtight container in the fridge
  • Perfect for meal prep and on-the-go snacking
